Slow Cooker Chicken Tacos

For a busy family of four, putting together a meal to please everyone is next to impossible. However, I may have found the one recipe that does just that and it is incredibly easy! 

Set up a taco buffet ahead of time to make the meal easy on the cook, with a bowl of shredded lettuce, a bowl of shredded cheese, diced tomatoes, and a bowl of sour cream so that your family can make their own tacos with this decadently cooked taco chicken meat. 

Ingredients:

1-2 lbs. boneless, skinless chicken breasts or thighs, defrosted

1 envelope of taco seasoning mix or make your own

1 – 16 oz. jar of salsa (any kind)

In the crockpot, empty the salsa and the taco seasoning, stir in the mix until combined. Next lay out the chicken over the sauce and spoon parts of the salsa mixture on top. Set your crockpot on low for 6-8 hours. When it is done the chicken should shred easily with a fork.  

Leftovers can be used later in the week or can be frozen for a different time. Use them to create more tacos,  burritos, on top of rice with some corn and black beans, for a chicken taco salad or in a chicken tortilla soup. Add with scrambled eggs for an on-the-go breakfast burrito. Bon Appetite!
